Lemon Meringue Pie - a scrumptious recipe!

There’s something incredible about how one dish can change a person’s life. I don’t mean this in an exaggerated way. Food is something so simple, yet so complicated in its own way. During this Food is Fuel month, I decided to bake something I never had before—a lemon meringue pie.


I chose to bake this because of the food tech students (thank you for that!). They made an eggless version of pie which I was completely and wholly obsessed with. As I’m a vegetarian, I don’t have a large variety of opportunities to make baked goods that need eggs. Naturally, I found a similar recipe and attempted to make one of my own.


The ingredients for the meringue, which is usually made from eggs, were:

  • 115 ml aquafaba, (chickpea brine)

  • 150 g caster or icing sugar

  • 1/2 tsp vanilla extract

  • 1/2 tsp lemon juice

  • 1/8 tsp cream of tartar

My sister helped me throughout this process and I was extremely thankful for her because it would’ve taken hours otherwise. We started off with making the crust. Honestly, it was slightly stressful; there were more than a few things that could’ve gone wrong. The entire process took about 2 hours but it was very much worth it. The dish was amazing if I do say so myself. The tang of the lemon curd blended perfectly with the slight blandness of the crust and sweet meringue.


I believe food is a beautiful way to express yourself and a great output for stress. Having the chance to change recipes to your wants while keeping a healthy aspect of it is truly amazing. I think the “Food is Fuel” month is a great chance for people to start cooking or baking. It doesn’t need to be complicated, it just needs to be you!
